Merle'S FRUGAL FISH PIE
Ingredients:
Box of Tesco Fish Pie Mix (already cut up)
Hard boiled eggs x 2
Topping
Mashed Potatoes x 3 large
Milk x 1 pint
Knob of butter
Seasoning
Sauce
1 heaped dessertspoon of flour
1½ butter
Parsley (good handful chopped)
Pint of Milk
Seasoning
Lee and Perrins (dollop)
How to make:
1. Simmer fish pie mix for about 10 minutes in the pint of milk on hob.
2. When cooked remove fish with slotted spoon and put aside
3. Reserve the milk to make the white sauce.
Sauce:
1. Dissolve the butter in a largish microwaveable bowl.
2. When butter is dissolved stir in the flour to get rid of any lumps.
3. Pour in milk and stir until dissolved. (If necessary use a whisk to get rid of any lumps).
4. Put bowl back in microwave and cook on high for about 2 minutes. Take out and stir. Replace in microwave and cook on high for another 2 minutes by which time the sauce will be getting thicker. Again, if there are any lumps stir or use whisk. If may be necessary to put back in microwave for another minute depending on thickness of sauce.
5. When sauce has slightly thickened add the parsley, seasoning, Lee & Perrins and stir well.
6. Pour sauce over fish.
7. Put mashed potatoes on top and spread evenly with a fork.
8. Put in the oven at 190 degrees (170 degrees fan) for about half an hour until hot and bubbling.
MORE EXTRAVAGENT HINTS AND TIPS!
If you want to be more extravagant add some capers or prawns, scallops, frozen peas to the fish. Tesco Value also do fresh smoked salmon trimmings and half a box would be sufficient. Freeze the remaining. Grated cheese can be added to the mashed potato to jazz it up. None of these are vital to the original pie!
